Variations of this recipe

Chocolate chips. If you want to add things in to fancy up the fudge, chocolate chips are a great one. Add them on to the top of the fudge after you put it in the pan.

Sprinkles. Sprinkle candy sprinkles on top of the fudge after you have spread it in the pan.

Chopped Pecans. After you have mixed the frosting and chocolate melts together add in about 1/2 cup of chopped pecans to make a strawberry pecan fudge.

Cut into shapes. Instead of cutting the fudge into squares, you can use cookie cutters to make shapes.

Change up the melting chips. I like using white chocolate ones, but you can also use colored melting chips instead of white chocolate chips. If you are wanting a red fudge then use red candy melts.

Add freeze-dried strawberries. You can get a bit fancy with this fudge if you want to and add some freeze dried strawberries into the fudge mixture or on top.

Drizzle with melted chocolate. If you want to add more flavor and get fancy you can also melt some additional white chocolate chips, milk chocolate chips or dark chocolate chips and drizzle the melted chocolate on top of the fudge before placing it into the fridge to set.

Tips for Making this recipe

Allow Fudge to cool completely. It is important that you cool the fudgebefore cutting it into serving sized pieces.

Use rubber or silicone utensils when mixing. I find that it is much easier to stir everything together when using a silicone or rubber spatula instead of a metal spoon.

Use a microwave-safe bowl. If you are heating the fudge ingredients in the microwave be sure that you are using a bowl that is safe to use in the microwave. You can use a metal bowl if you are using a double boiler to melt the chocolate.

Use a double boiler to melt the chocolate. You are going to need to know how to melt chocolate in the microwave or with a double boiler, so make sure you check out how to melt chocolate in the double boiler if you are going that route.

Why won't my 3 ingredient fudge set? This often happens when the condensed milk and chocolate chip mixture isn't hot enough to start. Everything must be completely melted before it is transferred to the pan to cool.

How to rescue fudge that won't set? ›

How can you fix soft fudge? Put it in a microwave safe bowl that is large enough that it won't boil over. Reheat it to the boiling point and cook for about 3 more minutes. Then you can beat some powdered sugar into it if this doesn't make it set.

How do you make fudge more solid? ›

How do you fix fudge that is too soft? Bring the fudge back to a boil with 1–2 US tbsp (15–30 ml) of cream. If your fudge is soft or runny, it probably didn't come up to a high enough temperature while it was cooking. Put it back into the saucepan and add 1–2 US tbsp (15–30 ml) of 35% fat whipping cream.

What happens if you don't cook fudge long enough? ›

Too Soft or Too Hard Fudge

Too little time and the water won't evaporate, causing the fudge to be soft. Conversely, cook it too long and fudge won't contain enough water, making it hard with a dry, crumbly texture.

What to do with failed fudge? ›

Options for what you can do with your unset fudge:

OPTION 1) Depending on how runny it is, you can either use it as a frosting for cakes, or a sauce for ice-cream. OPTION 2) Freeze it overnight. Cut it into squares. Cover each square thickly in melted chocolate, ensuring no part of the fudge is exposed.

Do you put fudge in the fridge to set? ›

Let the fudge rest at room temperature for 15 minutes before placing in the refrigerator, uncovered. Refrigerate until the fudge is firm, about 2-3 hours (or overnight), before slicing and serving.

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

How to tell if fudge is ready without a thermometer? ›

Using a clean spoon, carefully take a little of the syrup and drop it into the bowl of cold water. Leave to cool for a moment then pick up the ball of syrup. If it's pliable, sticky and can be moulded in your fingers easily, it has reached the soft ball stage and the syrup can be used to make fudge and marzipan.

How do you salvage hard fudge? ›

Grab the saucepan that you initially used to cook the fudge and toss the fudge back in along with 1 ½ cups of water and a splash of cream. Adding some cream of tartar is a helpful way to keep the sugar crystals at bay as well — it's not essential, but if you have some, definitely pour a little in.

What causes fudge to not set up? ›

Homemade Fudge Doesn't Always Set

If your fudge doesn't firm up after a few hours, you either have too high an amount of liquid to sugar, or your mixture hasn't reached the soft-ball stage. Using a candy thermometer can help home cooks avoid this problem.

Why is some fudge hard and some soft? ›

If you don't heat your fudge to a high enough temperature, you'll end up with a soft product. And if you heat the mixture too much, your fudge may be harder than you'd like.

How long does it take for fudge to fully set? ›

Proper fudge will set after sitting at room temperature for about 4 hours. Understand that cooking the fudge properly is the skirmish before the war. The real test of your mettle will occur when you beat the fudge, and learn to master the fine art of turning and pouring. And if it doesn't work out it's okay!

How do you keep fudge from sticking together? ›

To keep fudge pieces from sticking to themselves, store the chocolatey layers with waxed paper, which provides a naturally nonstick surface.
